Our complete menu is inspired by Denise and by her belief that quality ingredients require simple preparation and little adornment.

Our oysters are farmed in Carlingford Lough on beds that have had an international reputation for quality since the middle of the 19th century.

The crab and lobster are fished in Dundalk Bay and supplied to us on a daily basis. Occasionally, because of poor weather or indeed a poorly fisherman, they are not freshly available in season.

Our lamb is Cooley Mountain Lamb. From birth they have lived on mountain grasses and wild herbs. We believe this gives it a very special quality indeed.

Our butcher is just across the road from us and prides himself in the quality of his beef and lamb.

Periods of our life living in the Middle East and America have also infiltrated the menu.
